Cons
WooCommerce has so many external extensions that are poorly coded, with so much bloats. This sometimes break your site may cause it to crash.
The only thing I dislike about WooCommerce is that it does not seem possible to add multiple images to a product listing. Of, if this option is available, it's not intuitive.
The worst is when a update happens and then you have to go and find out all the issues that were caused and have to go back and figure out how to fix them.
The setup process is really confusing and clunky, and those new to WordPress etc will certainly struggle.

"Arguably the best eCommerce platform for beginners"
Pros: I love two things about Woocommerce the most. One is how easy it is to use. Unlike Shopify, a complete beginner can set up an e-commerce website rather quickly and without problems. The second thing is the community. So many people are using woocommerce, so if you ever face a challenge, there is already a fix online.
Cons: The fact that you need a plugin for every single custom thing you want. I'm still building a woocommerce site and I already have like 20 plugins, because some basic options are missing from the default WooCommerce.
"Good if you have wordpress and time to fine tuning "
Overall: The overall experience is good, we managed to do a really good looking store with top features at a really low cost and full customizable
Pros: Is really easy to install, integrate really well with wordpress and lot of plugins available
Cons: It could get slow as wordpress is heavy and this add more load, but if you are smart doing layers of caching you should be ok

Overall: For simple ecommerce setups, WooCommerce is smooth and easy to use. Again, if you have any sort of custom (even conventional) shipping, coupons, or store setups, you're stuck paying for extras that add up pretty quickly.
Pros: For the most basic of ecommerce setups, you can't beat free for Woocommerce. It's made by the same people that make WordPress, so it integrates very smoothly.
Cons: If you want to do anything of any complexity at all, you're stuck either writing a bunch of code yourself or paying yearly fees on their plugins.
"A good platform but I would pick a cloud solution."
Overall: I've been managing a WooCommerce store for a major outdoors venue in Italy handling subscriptions and event bookings for the last 5 years. During the load-heavy season a one-server LEMP stack is not enough and I highly recommend to switch to a separate database server. For smaller projects and on a tight budget I would recommend WooCommerce.
Pros: Very good for starters. On a more advanced level it offers you great flexibility and customization options but you need development skills.
Cons: If you do not perform proper server optimization it could be very heavy to handle.

Overall: It is far easier to use out of the box while still allowing control and customization than any other platform.
Pros: Legible code, easy to understand and customize
Cons: Frequent updates forcing constant development of customized code to ensure compatibility. To be fair, this is largely due to outside influences like hackers and cyber crooks targeting wordpress as a whole.
