Pros Whenever I need to perform any media related processing, conversion, editing or recording, I know that no matter the task's complexity - ffmpeg can do it. The ffmpeg command line program allows me to convert literately any media file into, again, literately any media file. This includes advanced processing, editing and encoding using the best open source encoders available for any format. Cons You definitively have to dig deep into the documentation when doing anything more advanced with ffmpeg, meaning that it may take some time to accomplish what you want.
